Eating for health and weight loss invariably means giving up or cutting back on junk food. This is not always easy! In fact, cutting certain foods from your diet can make you crave them, even if you didn’t want them before.

Try this: Don’t think about candy. What are you thinking about now? It’s candy, right?!

The same thing happens anytime you purposely give up a food and, on keto, that means carbs.

The good news is that while you won’t be able to eat things like real dairy ice cream on keto, there are things you can eat instead that won’t disrupt ketosis and will help you lose weight.

Treat yourself without breaking your diet with this keto vanilla ice cream.

Keto Vanilla Ice Cream

Ingredients for 8 Servings

  • 2 cups sugar-free condensed milk
  • 1 ½ cups heavy cream
  • 3 tablespoons powdered calorie-free sweetener
  • ½ teaspoon pure vanilla extract
  • 1/8 teaspoon salt

Instructions

  1. Place all the ingredients in a large bowl and whisk together until fully incorporated. Chill in the fridge for at least an hour.
  2. Pour the mixture into an ice cream maker and churn until it begins to set.
  3. No ice cream maker? Keep chilling for an hour and stirring until you reach the desired consistency.
  4. Transfer the ice cream to a resealable container and store it in the fridge. Defrost for 10 minutes before serving.

Nutrition Per Serving

  • 391 calories
  • 4 grams of fat
  • 7 grams of protein
  • 4 grams of carbs

Bottom Line

Ice cream isn’t just a keto no-no; most diets ban it. That’s hardly surprising considering how much sugar goes onto ice cream. What used to be a fairly healthy, naturally sweet treat is now basically candy in a bowl.

This recipe takes a little time to make, but your efforts will be rewarded. It’s very low in carbs but high in keto-beneficial fats. It tastes so good that you could easily forget you’re eating a diet-friendly food.

Customize up this recipe by adding your favorite low-carb flavorings, such as blueberries or dark chocolate chip – no added sugar, of course!
