Mushrooms are the perfect low-carb, keto-friendly food. They contain plenty of water and fiber, very little carbohydrate, and no sugar. They’re also delicious. You can bake, grill, or fry mushrooms or add them to your favorite keto dishes. Some people eat mushrooms in place of meat, as they can have a similar texture and are every bit as filling.

This recipe for keto stuffed mushrooms is very easy, takes no more than 30 minutes to make, but elevates the humble mushroom to new heights of flavor! Enjoy these stuffed mushrooms as a starter, as part of a tapas platter, or as a snack.

Keto Stuffed Mushrooms

Ingredients for Four Servings

  • 8 ounces of lean bacon
  • 12 mushrooms (three per person)
  • 2 tablespoons butter
  • 1¼ cups soft cream cheese
  • 3 tablespoons finely chopped fresh chives
  • 1 teaspoon smoky paprika powder
  • Freshly ground salt and pepper to taste

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit or 200 degrees centigrade.
  2. Grease a medium-sized baking tray with a bit of butter or lard.
  3. In a pan, dice the bacon and then fry it until it’s very well done and crispy.
  4. Wash, peel and remove the stalks from your mushrooms. Finely chop the stalks and fry in the bacon pan, adding more butter if required.
  5. Put the mushrooms on the baking tray, cups uppermost.
  6. In a bowl, combine the bacon bits, fried mushroom stalks, and the remaining ingredients.
  7. Put a tablespoon or two of the mixture into each mushroom.
  8. Bake until the mushrooms are golden brown – usually 25 to 30 minutes.

Nutrition Per Serving

  • 555 calories
  • 48 grams of fat
  • 25 grams of protein
  • 7 grams of carbs
  • 1 gram of fiber
  • 6 grams of net carbs

Bottom Line

It’s hard to believe that such a delicious recipe is so low in carbs. It’s the perfect keto-friendly recipe! High in ketone-boosting fats and very tasty, this is the ideal dish for those days when you don’t want to eat a lot of meat but still want to hit your keto macro goals.

Mushrooms aren’t just good for weight loss; they’re good for your health too. Mushrooms are very nutritious and contain lots of beneficial oils, vitamins, and minerals.

Dieting is often said to be boring, but it doesn’t have to be. Treat yourself with these keto stuffed mushrooms; you’ll probably forget you are on a diet at all!
