Keto Stuffed Mushrooms
Ingredients for Four Servings
- 8 ounces of lean bacon
- 12 mushrooms (three per person)
- 2 tablespoons butter
- 1¼ cups soft cream cheese
- 3 tablespoons finely chopped fresh chives
- 1 teaspoon smoky paprika powder
- Freshly ground salt and pepper to taste
Instructions
- Preheat your oven to 400 degrees Fahrenheit or 200 degrees centigrade.
- Grease a medium-sized baking tray with a bit of butter or lard.
- In a pan, dice the bacon and then fry it until it’s very well done and crispy.
- Wash, peel and remove the stalks from your mushrooms. Finely chop the stalks and fry in the bacon pan, adding more butter if required.
- Put the mushrooms on the baking tray, cups uppermost.
- In a bowl, combine the bacon bits, fried mushroom stalks, and the remaining ingredients.
- Put a tablespoon or two of the mixture into each mushroom.
- Bake until the mushrooms are golden brown – usually 25 to 30 minutes.
