- 1 cup shredded part-skim low moisture mozzarella cheese
- 1 large egg yolk
- Salt and pepper to taste

- Put the cheese in a microwaveable bowl and heat for one minute until it has melted. Use bursts of 15 seconds to avoid overheating the cheese. Once melted, allow it to cool for one minute.
- Next, add the egg to the cheese and stir to combine. This should create a yellow dough.
- Place a piece of baking parchment on your work surface and put the dough in the center. Place another sheet of parchment on top.
- Using a rolling pin, roll the dough until it’s about 1/8 of an inch thick.
- Remove the top sheet of parchment and cut the dough into ¼ to ½ inch wide strips. Refrigerate for 6-8 hours.
- When you are ready, cook your keto pasta in a pan of boiling water for 45-60 seconds.
