Ingredients for Four Servings
Tortilla
- 5 cups of shredded mozzarella cheese, divided into four portions
Filling
- 1 large yellow onion, finely chopped
- 2 tablespoons olive oil
- 1-pound ground beef
- 3 tablespoons Tex-Mex seasoning
- Salt to taste
- 2 medium tomatoes, sliced
- 2 cups of shredded leafy green vegetables, such as lettuce or spinach
Instructions
- Heat the olive oil in a large pan on high heat. Add the beef and onions and cook until the meat is browned and the onions are soft. Add the Tex-Mex seasoning and salt and pepper to taste. Turn down the heat and keep warm over a low flame – usually 10-12 minutes.
- Heat another pan over medium heat. Spread a portion of the mozzarella into a rough circle and cook until it melts and begins to bubble – usually 2-3 minutes.
- Portion out a quarter of the cooked meat, add some tomato slices and a handful of greens, and fold in half.
- Cook both sides until your cheese burrito is browned.
- Repeat three more times to make four portions.
