Keto Meatballs
Ingredients For Four Servings
1lb ground beef
- ¾ cup shredded Parmesan cheese
- 1 egg
- 1 teaspoon salt
- ½ tablespoon dried basil
- ½ teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- 3 tablespoon olive oil
- 1¾ cups canned tomatoes
- 2 tablespoons fresh parsley, finely chopped
- 7 oz fresh spinach
- 2 oz butter
- 5 oz fresh mozzarella cheese
- Salt and pepper
Instructions
- Put the meat, parmesan cheese, egg, salt, and spices in a bowl and mix by hand. Form the mixture into 16 one-ounce balls.
- In a frying pan, heat the olive oil and then brown the meatballs.
- Reduce the heat, add the canned tomatoes and parsley, and simmer for 15 minutes, stirring occasionally. Season with salt and pepper as needed.
- In a separate pan, melt the butter and wilt the spinach for 1-2 minutes. Season with salt and pepper as required.
- Add the spinach to the meatballs and then serve.
- Tear the mozzarella into chunks and spread over the meatballs.
