The low-carb ketogenic diet is one of the best ways to lose weight and keep it off. Cutting carbs from your diet forces your body to burn more fat for fuel.

But there is a tradeoff; going keto invariably means giving up many of your favorite foods, such as bread, rice, pasta, and potatoes.

The good news is that, with a little out-of-the-box thinking, you can make low-carb versions of many of the foods banned on keto. In a lot of cases, these low-carb alternatives taste just as good as the real thing!

The next time you are craving mashed potatoes, make this recipe for keto mashed cauliflower instead. It tastes great, and, as well as being lower in carbs, it’s packed with fiber and contains fewer calories too.

Keto Mashed Cauliflower

Ingredients For Four Servings

  • 1 large cauliflower, cut into florets
  • 2 tablespoons of butter
  • 2 tablespoons of cream cheese
  • 4 cloves of garlic, crushed
  • Sea or kosher salt to taste
  • Freshly ground pepper to taste
  • Freshly chopped chives for garnish

Instructions

  1. Put the cauliflower in a large pan and cover with water. Add some salt. Turn up the heat, so the water boils. Simmer for 5-10 minutes, or until the cauliflower is tender.
  2. Drain the cauliflower and then put it into a food processor. Add the other ingredients, except the chives.
  3. Puree until smooth. Scrape the sides of the food processor to make sure you get it all.
  4. Season with salt and pepper and then serve, garnished with the chopped chives.

Nutrition Per Serving

  • 128 calories
  • 8 grams of fat
  • 4 grams of protein
  • 11 grams of carbs
  • 4 grams of fiber
  • 7 grams of net carbs

Bottom Line

A lot of people are wary about starting the ketogenic diet. They know it will help them lose weight, but they can’t see how they’re going to cope without high carb staples like bread, pasta, and potatoes.

Some people can give up these foods easily, but for others, it’s just too hard. They feel like they’re addicted to carbohydrates.

If the idea of giving up your favorite carbs fills you with dread, this is the recipe for you. It’s just as smooth and creamy as mashed potatoes, but it won’t derail your low-carb diet. It’s high in fiber and filling too, so it’s the perfect weight-loss food.

Keto Mashed Cauliflower

Serves: 4 Servings
Cooking time: 10 minutes
