Liver is one of those meats you either love or hate. But, if you don’t like liver, it’s a good chance it’s because the last time you had it, the liver was not cooked properly. In this recipe, we are going to share the best way to cook liver perfectly.

As an added bonus, this keto-friendly dish also contains tasty bacon and onions. It’s a veritable taste sensation.

Best of all, this is a very nutritious meal. Liver is packed full of useful nutrients, including vitamins B6 and B12, vitamin A, iron, and even vitamin C.

Serve with some low-carb veggies or a green salad. This dish goes especially well with lightly cooked, mashed cauliflower, which is an excellent alternative to high-carb mashed potatoes.

Keto Liver and Onions

Ingredients for Four Servings

  • ½ cup milk
  • 1 tablespoon vinegar
  • 1-pound grass-fed beef liver
  • 3 large onions, sliced
  • 6 slices bacon
  • 5 tablespoons butter
  • ¼ cup thyme
  • Salt and pepper to taste

Instructions

  1. Put the milk and vinegar in a shallow bowl and stir. Cut the liver into strips and soak in the liquid for 20-30 minutes.
  2. Meanwhile, cook the bacon in a large frying pan. Remove the bacon and dry it with paper towels. Cut the bacon into one-inch strips. Keep the bacon grease.
  3. Put half the butter in the pan with the bacon grease and add the onions. Cook over medium heat. Add a sprinkling of salt to taste. Stir occasionally until the onions are brown and caramelized. Remove and set the cooked onions aside.
  4. Add the remaining butter to the pan and add the thyme. Meanwhile, remove the liver from the milk/vinegar and dry with a paper towel. Discard the liquid. Cook the liver on high heat for about two minutes per side to sear and seal.
  5. Add the bacon and the onions and cook for another two minutes.
  6. Finally, cover the pan, turn the heat down low, and leave to cook for a further 15-20 minutes, stirring occasionally. Season with salt and pepper as needed.

  • 446 calories
  • 42 grams of protein
  • 25 grams of fat
  • 16 grams of net carbs
  • 4 grams of fiber
  • 6 grams net carbs

Bottom Line

Liver is one of the most nutrient-dense meats you can eat. Vitamin A is good for your eyes and may help reduce your risk of Alzheimer’s disease. B vitamins are important for energy production. The high iron content means liver can help ward off anemia.

Unfortunately, as nutritious as liver is, some people hate the texture and the taste.

Soaking the liver in a mixture of milk and vinegar might sound like an odd thing to do, but it makes it more tender and less rubbery. It also helps eliminate the bitterness that puts so many people of this nutritious organ meat.
