Ground beef casserole, also known as hamburger casserole, is an easy-to-make, economical recipe. It’s packed with protein, filling and comforting, and ideal for those days when you want to eat well but don’t want to spend all day in the kitchen.

This simple but tasty recipe is made from ingredients you’ve probably got in your store cupboard right now and is very low in carbs, so it won’t derail your ketogenic diet.

Serve which a big plate of hearty, low-carb veggies to fill up without gaining weight or delaying weight loss. In fact, it’s low enough in carbs that, if you want a second serving, you can probably have one and still stay true to your eating plan!

Keto Ground Beef Casserole

Ingredients For Eight Servings

  • 1-pound ground beef
  • 3 ounces cream cheese
  • ½ cup beef broth
  • ½ cup heavy whipping cream
  • 1 teaspoon garlic powder
  • 1 onion, diced
  • 2 cans green beans, drained
  • ¾ cup cheddar cheese
  • ¾ cup mozzarella cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit/180 degrees centigrade.
  2. In a cast-iron skillet, brown the beef and drain off any excess liquid.
  3. Add the cream cheese, beef broth, cream, garlic powder, onion, and salt and pepper. Stir and cook until the mixture starts to thicken. Turn the heat down and simmer for 10 minutes.
  4. Add the green beans, and then sprinkle with the grated cheese.
  5. Bake in the oven for 25-30 minutes.

Note: Use a cast-iron skillet and not a frying pan with a plastic handle, which will melt or even catch fire in your oven.

Nutrition Per Serving

  • 281 calories
  • 20 grams of fat
  • 18 grams of protein
  • 4 grams of carbs
  • 0.75 grams of fiber
  • 3.25 grams of net carbs

Bottom Line

Ground beef is one of those ingredients that can seem a little limiting. Other than using it to make burgers, chili, or bolognaise, it’s hard to think of many other uses. After all, if you’re going to eat beef, why not eat a steak, right?!

The thing is, ground beef is cheap, and that’s good news if you are doing keto on a budget. In fact, this entire recipe, which makes eight servings, will only cost a few dollars to make.

However, despite being economical and easy to make, this keto ground beef casserole is surprisingly tasty and very low in carbs.

It’s easy to dismiss ground beef as a boring ingredient, but, as this recipe proves, it doesn’t have to be.
