Ingredients for 9-Fritters
- ¼ cup of finely ground almond flour
- 1 ¾ cup of canned sweetcorn, drained
- 1 medium-sized egg
- 2 tablespoons of chopped red or green onions
- 2 tablespoons of milk or nondairy equivalent
- Salt and pepper
Instructions
- Place the flour, corn, egg, onion, and milk in a medium bowl and combine well. Season with salt and pepper to taste.
- Heat a little oil in a non-stick pan over medium heat, and then add the batter. Spoon it out to make nine fritters and cook three at a time.
- Cook until the fritters start to brown. Flip and cook the other side.
- Place the cooked fritters on a piece of absorbent kitchen roll to soak up any excess oil, and then serve.
