Going keto means eating lots of protein and healthy fats. Meat, fish, and eggs are in, and pasta, bread, and potatoes are out. This raises a question – what CAN you eat to make your meals more filling and tastier?

The obvious answer is non-starchy vegetables, but endlessly eating things like cauliflower, cabbage, salad greens, and zucchini can soon get old, even if they ARE all-but carb-free.

Liven up your keto meals with these low-carb corn fritters. They taste good, are crispy, and are a great addition to almost any meal. Serve with the meat or fish of your choice, or with bacon and topped with a fried egg. Delicious!

Keto Corn Fritters

Ingredients for 9-Fritters

  • ¼ cup of finely ground almond flour
  • 1 ¾ cup of canned sweetcorn, drained
  • 1 medium-sized egg
  • 2 tablespoons of chopped red or green onions
  • 2 tablespoons of milk or nondairy equivalent
  • Salt and pepper

Instructions

  1. Place the flour, corn, egg, onion, and milk in a medium bowl and combine well. Season with salt and pepper to taste.
  2. Heat a little oil in a non-stick pan over medium heat, and then add the batter. Spoon it out to make nine fritters and cook three at a time.
  3. Cook until the fritters start to brown. Flip and cook the other side.
  4. Place the cooked fritters on a piece of absorbent kitchen roll to soak up any excess oil, and then serve.

Nutrition Per Fritter

  • 59 calories
  • 2 grams of fat
  • 3 grams of protein
  • 4 grams of carbs
  • 1 gram of fiber
  • 3 grams of net carbs

Bottom Line

Corn is a useful keto ingredient. Despite being a grain (corn is not a vegetable), it’s high in water and fiber and low in carbs. Corn is sweet and crunchy, which are two things that are often missing on the ketogenic diet.

Quick and easy to make, these corn fritters are ideal for breakfast, as an accompaniment to keto staples like meat and fish, or on their own as a tasty and filling snack.

Spice them up with sweet chili sauce and serve with slices of avocado to increase your intake of healthy fats. You can also make them even more flavorsome by adding grated parmesan cheese to your batter.
