For The Filling
- 2 tablespoons of boiling water
- 2 tablespoons of sugar-free granulated sweetener
- 2 teaspoons of ground cinnamon
For The Frosting
- 2 tablespoons of cream cheese
- 1 tablespoon of full-fat unflavored Greek yogurt
- ¼ teaspoon of vanilla extract
- ½ teaspoon of sugar-free granulated sweetener
Instructions
- Preheat your oven to 180 degrees centigrade/360 degrees Fahrenheit.
- Put a non-stick pan over a low heat and add the mozzarella and cream cheese. Melt them together and stir until smooth, and then remove from the heat.
- Add the egg to the cheese/cream mixture and stir.
- Add the almond flour and baking powder. Stir to combine and then mix with your hands to make your dough.
- Split the dough into six balls, each one weighing about 50 grams/2 ounces.
- Form each ball into a 12 to 14-inch roll and flatten to make them as thin as possible.
- Next, boil some water, and, in a small bowl, stir together two tablespoons of water with the sweetener and cinnamon to make your filling.
- Using a pastry brush, spread the filling evenly over the flattened dough balls.
- Coil each one into a roll and cut in half sideways to make 12 buns.
- Bake in the oven for 20 minutes or until browned.
- Meanwhile, mix the ingredients for the frosting.
- Remove the baked buns from the oven and drizzle with the frosting. Serve warm.
