Carrot cake is one of those desserts that sounds like it shouldn’t work but is actually delicious.

It’s a cake, but it’s made with carrots? You can’t be serious! And yet, it’s those carrots that make this cake naturally sweet and moist and means that carrot cake is at least a little good for you.

That said, even carrot cake is not keto-friendly. It usually contains wheat flour and sugar, both of which are no-nos on the low-carb ketogenic diet.

This clever recipe replaces high-carb ingredients with low and no-carb alternatives to make a low-carb keto-friendly carrot cake that won’t derail your diet.

Keto Carrot Cake

Ingredients for 12 Servings

For the Cake

  • carrot cake ingredients4 whole eggs
  • 1/3 cup olive oil
  • 2 teaspoons vanilla extract
  • 1 cup powdered sugar-free sweetener
  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 2 teaspoons baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground nutmeg
  • 1 tablespoon ground cinnamon
  • 1 pinch of salt
  • 1 cup butter, melted
  • ½ cup pecans, chopped
  • 2 cups of carrots, shredded

For the Frosting

  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar-free sweetener
  • ½ cup butter
  • 1 teaspoon vanilla extract
  • 1/3 cup heavy cream

Instructions

  1. Preheat your oven to 180 degrees centigrade/350 degrees centigrade. Line a 9-inch cake pan with baking parchment.
  2. In a bowl, whisk together the eggs, olive, and vanilla extract.
  3. Add all the dry ingredients and mix well.
  4. Stir in the butter, nuts, and carrots.
  5. Pour the cake batter into your prepared baking pan. Bake for 30-35 minutes and allow to cool.
  6. Meanwhile, blend the frosting ingredients and spread evenly over the cooked, cooled cake, and then slice into 12 portions. Refrigerate until ready to serve.

Nutrition Per Serving

  • 445 calories
  • 44 grams of fat
  • 8.1 grams of protein
  • 7.5 grams of carbs
  • 3.3 grams of fiber
  • 4.2 grams of net carbs

Keto carrot cake might sound like an oxymoron, but that’s exactly what this recipe is for. Usually, on keto, high-carb foods like cakes, cookies, and sweet treats are off the menu. Just one small serving will kick you out of ketosis.

But, with some savvy substitutes, this recipe manages to taste great without ruining your low-carb diet.
