Made with wheat flour and sugar and usually topped with honey or syrup, buñuelos are delicious but are definitely NOT keto-friendly.

Keto Buñuelos
Ingredients For Eight Servings
- 2 cups coconut oil
- 1 cup fine ground almond flour
- 2 tablespoon ground psyllium husk powder
- 1 pinch salt
- 1 pinch ground nutmeg
- ¼ cup erythritol
- ½ teaspoon baking soda
- 1 cup crumbled feta cheese
- ½ cup cream cheese
- 2 large eggs
Instructions
- Heat the coconut oil in a 10-inch skillet.
Combine the almond flour, psyllium husks, salt, nutmeg, baking soda, and erythritol in a bowl.
- Crumble the feta and add it to the dry mixture.
- Add the cream cheese and eggs and fold them into the dry ingredients.
- From the dough, form eight equal-sized balls and then drop them into the oil. Cook for 2-3 minutes until browned, and then turn them over and cook for another two minutes.
- Continue until all the dough is cooked.
- Dust with a bit of powdered erythritol, and then serve while still warm.
